Squid casserole


Ingredients: 1 squid, garlic, 2 tablespoons olive oil, pinch of salt, hot chili pepper, 6/8 cherry tomatoes, 1/4 cup white wine, parsley.

Preparation: Brown the garlic with chili pepper and salt in very hot olive oil. Clean the squid-pull off the head and remove the plastic-like spine. Scrape with your fingers the white stuff from the inside. Rinse well. Cut off ends of squid. Slice squid into small rings and pull off any remaining white mucouse- like stuff. Saute’ until opaque. Add cherry tomatoes and mash. Reduce again for about 10 minutes. Sprinkle with parsley.

You can use this dish as an antipasto and serve it with toasted bread or use it as a sauce to prepare Linguine or Spaghetti with calamari.
